Carbs are my favorite food group, especially bread.
It’s a guilty pleasure – worse than chocolate even, and even though I love it, I know its not the best for me. You can’t survive on carbs alone, especially if you want to be healthy. So here is an awesome recipe for vegan, nutritious bread.
Simple, Vegan Bread
2 Packs of yeast
1/4 Cup Warm water
2 Cups Hot water
3 Tbsp. Stevia
1 Tbsp. Salt
1 ½ Cups Whole-wheat flour
4 ½ Cups Hemp powder
1/3 Cup Canola oil
First, pour the warm water into a small bowl (preferable ceramic), add the yeast. Do NOT stir the yeast and water together. Let them sit, set to the side.
In a large mixing bowl, add the stevia and salt. Pour the hot water into the bowl, then stir with a wooden spoon until the stevia and salt dissolve completely. Combine the 1 ½ Cups whole wheat flour and hemp powder into the water mixture. Pour the canola oil on top of the dough and then add the yeast mixture on top. Do NOT stir. Add the remaining 3 Cups of whole-wheat flour on top. Mix well with the wooden spoon. Mix the dough with your hands and fists. Afer the dough has become pliant and moist (not gooey), cover the bowl with a damp towel. Set the bowl aside for AT LEAST 45 minutes.
After the dough has set out, divide it in two. On a flat countertop or cutting board lightly floured (you can add maca powder and oats for extra nutrients) knead the dough. If you are short on time or can’t recruit some help, it is not absolutely necessary to knead the dough. Flatten each half of the dough into an oval about ½ to ¾-inch thickness.
Roll the dough lengthwise and place it on an ungreased baking sheet. I would recommend that you use one cookie sheet per roll of bread. Cover the rolls of bread with a moist towel and set it aside for at least 45 minutes to rise.
Preheat the oven to 375 degrees. After the dough has risen bake it for 23 minutes (weird time I know, but it works). Allow the bread to cool for 15 minutes before eating.
Yes, this recipe takes a little more time (about 2 hours of prep time and 23 minutes of cooking time); however, its totally worth it. This bread is delicious and nutritious. It will disappear in minutes! Enjoy!
