Raw Cacao Chocolate Ice Cream

Down here is San Diego the weather has finally decided to get nice. For us, the warm summer months are barely starting this year. So what better way to enjoy the warm weather and brilliant sun than with ice cream? Oh and guess what?! This ice cream is made free of dairy and free of soy. Pretty exciting for an ice cream.

Chocolate Ice “Cream”

1 Cup Raw Cacao Powder
1 Cup Raw Carob Powder
8 Tblsp. Raw Agave Nectar
2 Medjool Dates
4 Cups Water
1 Cup Cashews
Start by blending the cashews with the water to create your own cashew “milk.” I would recommend using a blender or food processor for this. Next, add in the rest of the ingredients and blend them together. Pour the mixture into an ice cream maker, I prefer the old fashioned kind. If you don’t have an ice cream maker you can pour the mixture into a freezer safe container, cover it and simply freeze it. After the ice cream has completely frozen, enjoy!
