Pancakes and waffles are always a delicious treat, especially on those lazy weekends when you sleep in and then have a savory brunch. Here is a healthy vegan recipe for waffles (you can also use it as a recipe for pancakes). It is nutrient rich, high in protein, and low in fat. Enjoy!
Hemp and Oat Waffles
Ingredients:
2 Tbsp. Sesame seeds
2 Cups Water
2 Cups Rolled Oats
1 Tbsp. Whole wheat flour
1 Tbsp. Hemp powder
1 Tbsp. Cacao butter
½ tsp. Salt
2 tsp. Vanilla
2 Tbsp. Pure Maple syrup (Sucanat works as a substitute)
Directions:
Using a blender or food processor, grind the sesame seeds. Add in the remaining ingredients and blend well. Make sure to pre-heat the waffle iron. Then pour batter into a waffle iron (or onto a griddle if you are opting for pancakes) and bake for 8-10 minutes. The batter may thicken as it sits so add a little water to return the batter to the original consistency.
