Everyone loves chocolate. But let’s face it; the chocolate bars at your local grocery store have absolutely no nutritional benefit. Yes, they taste great! I’ll admit that. However, they are filled with calories, have a high fat content, and the amount of sugar is far above your recommended daily value. Here is a delicious recipe for truffles that not only is vegan, but nutritious. Don’t believe me? Take a look for yourself. There is no added sugar, far fewer calories and fat content than any chocolate you could buy at the grocery store or gas station, and it even has nutritious elements. Cacao is known for its high levels of antioxidants, magnesium, and chromium as well as many other minerals and vitamins. You can’t go wrong with these truffles, just try to restrain yourself from eating them all at once.
Chocolaty Cacao Hemp Truffles-
½ Cup Hemp hearts
2 Tbsp. Water
2 tsp. Vanilla extract
1 Cup Medjool dates (pitted)
Pinch Celtic sea salt
2 Tbsp. Cacao nibs, ground (Cacao beans work as a substitution)
5 Tbsp. Cacao powder
½ Cup Hemp hearts (set aside for rolling)
First, grind up the Cacao nibs or Cacao beans. Remove the ground nibs or beans and set them aside. Combine the first ½ Cup of hemp hearts (set the other ½ Cup aside), water and vanilla extract in a blender or food processor until a creamy substance is formed. Next, add the pitted dates and the Celtic sea salt into the blender or food processor and mix until a paste is formed. Mix in the ground Cacao nibs (or beans if you prefer) and the Cacao powder into the paste.
Roll the paste into balls. In order to prevent the chocolaty paste from sticking to your fingers you can wet your hands. Roll each of the balls in the ½ Cup of Hemp hearts that you had previously set aside, making sure to evenly cover the truffles.
Enjoy these delicious truffles while getting a serving of necessary antioxidants and vitamins.
